You'd still have access to Bleed (though not as effectively as an Arcane build, of course), as well as access to high crit damage via knives etc. And the Waterfowl Dance Art can be useful at high levels of Dex for the sheer damage (if you can get it off without being poise broken).Also, I super do not recommend the guardian swordspear. I tried it because it looks cool and has dex compatibility. Despite having the best dex scaling in the game, it swings slower and hits less hard than 2 straight or curved swords. The best damage I could get in a dexterity build was with a dw jump slash build.
