10va vs 30va makes no difference unless driving multiple chimes. Same with wiring. Only issue with your plan is that you need to make sure to wire in the Nest Connector (puck) as there have been reports of transformers dying without it when there is no chime. I would also add a resistor to substitute for the load of a chime.
